Chicken Sausage, Pepper, and Onion Sandwich

I took advantage of the warm weather last week to have a simple dinner of grilled chicken sausage with onions and peppers on a roll served with a pasta salad (to be posted shortly- stay tuned!).  It was great because it didn’t heat up the kitchen, and the red pepper and onion worked very nicely with the grilled chicken sausage.  Chicken sausage should be pretty easily found, I’ve seen Applegate Farms brand in most grocery stores.  We used Stew Leonard’s “Naked” Sun dried tomato chicken sausage, and it was fantastic.  This would also work with hot or sweet Italian sausage very well.

Chicken Sausage, Pepper and Onion Sandwich


  • 12 oz. package chicken sausage (such as Applegate Farms or Stew Leonard’s)
  • 1 red pepper, seeded and cut into 1-inch thick strips
  • 1 red onion, peeled and cut into 1-inch thick strips
  • 1 Tbs. olive oil
  • salt and pepper to taste
  • 6 sandwich rolls of your choice (I used whole wheat ciabatta)


Heat the grill to medium-high heat.

Put the sausages on the grill and turn occasionally, until cooked through, about eight minutes.

Heat the oil in a medium skillet over medium-high heat.

Add the onion, pepper, salt and pepper to the skillet and stir to toss.

Reduce the heat to medium, and continue to cook the pepper and onion, stirring, for about 8 minutes, until onion has softened and begins to caramelize.

Slice the rolls.

Remove the sausages from the grill and put one sausage on each roll.

Top each with peppers and onions.

If desired, you can also add cheese, barbecue, mustard, ketchup or other condiments.

Serves 6.
