Grilled Chicken with Cilantro Lime Sauce

After sharing five desserts, it’s time to share something a little more appropriate for dinner.  We’ve been putting our grill to good use.  Lately when I make a grocery list I check the forecast to see how often Lane will be able to throw something on the grill while I steam some veggies.  I love grill nights because it’s easy to get a healthy meal on the table and there are zero complaints from the kiddos.  This grilled chicken with cilantro lime sauce was no exception.  I served it with brown rice and steamed zucchini and there were no leftovers to speak of.

Grilled Chicken with Cilantro Lime Sauce

Ingredients:

  • 1/4 C. fresh lime juice (about 3-4 limes)
  • 1 clove garlic, minced
  • 1/4 tsp. dried red pepper flakes
  • 1/4 C. extra virgin olive oil
  • 2 Tbsp. minced fresh cilantro
  • 1 1/2 lbs. boneless skinless chicken breasts

Directions:

Preheat the grill to medium or medium-high heat.

Slice each chicken breast in half horizontally and sprinkle both sides of each piece of chicken with salt and pepper.

In a small bowl whisk together the lime juice, garlic, and red pepper flakes.

Stream the olive oil into the lime juice mixture while whisking constantly.

Whisk the cilantro into the lime juice mixture and set aside.

Grill the chicken breasts, turning once, until they reach an internal temperature of 160 degrees.

Remove the chicken from the grill and place it into a shallow serving dish.

Spoon the cilantro lime sauce over the chicken and serve.

Makes 6 servings.
